This book is based on the home recipes of Eden's extended family who are part of a fascinating minority within a minority in the dazzlingly diverse world of Ottoman Salonika. Specifically, Eden's family are Ma'min, the Judeo-Muslim descendants of the followers of the Jewish messiah Shabbatai Zvi who continued to follow him after he renounced his claims and coverted to Islam. The Ma'min are now Muslim, but their culture is that of the Sephardic Jews in Salonika from whom they are now sundered, and so, to a large degree, is their cooking. Most of these wonderful recipes are intrinsically kosher or easily made kosher with the substitution of one or two ingredients. As Muslims, the Ma'amin now follow Islamic dietary rules, rather than the Jewish ones, but you can see from the recipes that this small, insular community hasn't strayed very far from its origins, at least culinarily. This is a fascinating introduction to a small, relatively unk
